We toured the water buffalo farm and watched them make mozzarella. Quite a manual process. They finish by noon and only sell there. They also make yoghurt and ice cream. The cows have a relaxation room where the cows can get bottle brush massages and listen to classical music. They go into the milking stall and infrared finds the teats for milking. Then off to feeding. We bought a kilo to take home.
